World Environment Day 2015: What Restaurants are Doing with Their Leftover FoodSitting across the table from a person that wastes food is something that really drives me up the wall. Not because it gets me thinking of the hungry in other developing countries, but of the ones living on the street right outside the very restaurant. If you're someone that follows the news, at least partially, then you'll know that India is home to the world's largest number of hungry people. India's malnourished people account for 15 percent of the country's population, which by the way translates to 194.6 million people.

(Why You Must Include Seasonal Produce in Your Food) The 2014-2015 Global Hunger Index (GHI) puts India at rank 55, which might be an improvement from how we ranked in 2013 but the sad truth is that we're still part of a country where the richest 10 percent of the population holds three quarters of the country's wealth. India is largely plagued by poverty, huge income gaps, almost no food security and high food wastage.

(PM Modi's Mega Food Parks to Help Curb Food Wastage)

Underestimating the Impact of Leftovers

I can't say I have statistical proof for this, but just going by common sense: The restaurants in Delhi, both big and small, generate tonnes of leftover food every day. While some of it is all bones and peels, the rest include good food and a lot of it comes from the customer's table rather than the restaurant's kitchen.

(9 Ways to Avoid Food Wastage at Home)

The Emerson Food and Wastage report pegs India's food wastage at Rs.44,000 crores. While some of it is due to lack of storage facilities, a lot of it comes from restaurants. So if you were to take all of this food and distribute it amongst the hungry, if not poor, then I believe you'll be giving them at least one square meal a day.

(Millions Around the World Remain Hungry)

We spoke to over 30 restaurants in Delhi and asked generally about what they do with their leftover food and you'll be surprised to know that over half of them throw it away.

Dum Pukht, the popular Indian restaurant at Maurya said they give away their leftover food to the AWB Food Bank at the end of the day. Varq, at the Taj Mahal Hotel said they  give the leftover food to the NGO named Aap ki Rasoi. Zerzura said they tend to avoid any wastage of food as their place is not very big and even if there are leftovers, they give it to their employees. Mia Bella said they have a sort of per plate system so each portion is meant for one person which is why they usually don't have too much leftover food.

Kainoosh said they marinate/prep food in limited quantities so they usually don't have too much leftover food either. In case they do, the staff usually takes it home. Lodi, the Garden Restaurant said that they usually throw away the remaining food because they don't have much of it. But they are trying to find an NGO to help them re-distribute it instead. read more http://goo.gl/7pnlsz

Askmen Reviewed Lodi - The Garden Restaurant

Far from the hustle and bustle of life, Lodi - the garden restaurant is a chic, cozy and romantic haunt in Delhi. We had the chance to sample some of its gastronomical offerings recently, and we've come back thoroughly impressed.
Ambience

As you enter the restaurant, you'll feel like you've been transported into a magical land with lanterns that dangle from tree tops, candles that gently flicker with the evening breeze, wooden carts that double up as tables, and curtained cabanas that offer its patrons a sense of privacy. Lively, vibrant, yet very homely, Lodi fuses the very best of European and Mediterranean decor to its patrons.

And as the sun fades, you will find yourself relaxing under the stars dotting the velvet black sky, in the womb of a lush green garden – well lit with a plethora of hanging lanterns.

Lodi boasts of an eclectic menu of sorts, blending in the best of European and Asian culinary delights. The chefs use fresh and mostly ‘home-grown’ seasonal ingredients from their own Noida garden, and every dish looks like a work of art— a pleasurable experience for both the eyes and the taste buds.
Every dish is meticulously crafted by the hands of Lodi's expert chefs, and this attention to detail can be felt in every bite. The best part about this place is that its chefs keep evolving the menu to keep up with the season, the demand and the expectations of the customer.
From food festivals to fresh menus per quarter, Lodi does what others in the restaurant business fail to provide - a seasonal upgrade. Customers can pair their meals with a drink from the full-serviced bar as well.

The main course

- Salad: We tried two types of salads. First one was made up of farm fresh greens, tomatoes, pear, sunflower seeds & goat cheese with extra virgin olive oil & honey dressing. Not only was it refreshing, but the hint of goat cheese worked as a superb palette cleanser.

The second salad was a raw papaya salad with runner beans, shallots & coriander leaf, garnished with cracked peanuts and burnt chili.
- Starters: For starters, we tried the ‘bharwa mirch paneer’, a dish where the sweetness of goat cheese intertwines with the crispy outer layer of mirch, served with plenty of sweet chilli oil. Next up was a portion of crispy prawns doused in sesame seeds. These tasted as good as they sound.

- Pasta: The vegetarian penne pasta is their most talked about dish. And for good reason. It's light and healthy, cooked in olive oil, and enhanced with just the right amount of basil and garlic

- Spare ribs: The pork ribs glazed with house barbecue sauce will melt in your mouth. Coated with the adequate amount of spices, their smoked baby back ribs are a must try.

Dessert

We definitely recommend their home made fig ice-cream for one. The strawberry cheesecake is downright heavenly, and the banoffee pie is excellent too. However, with a loving blend of deep-dark caramel, the fig ice-cream was a showstopper.

So would we make another trip to this restaurant? Absolutely, but not just for the food. The staff is extremely courteous as well, and as we've already mentioned, the ambiance is stellar. This place is perfect for a family outing, especially if you're looking at a Sunday Brunch.
